We come from years of whisky making

Head Distiller Rob Polmear’s experience goes beyond his former roles as Head Distiller at Overeem Whisky and Head of Production at Lark Distillery.

When we were growing up, if Rob wasn’t brewing or distilling, he’d be culturing cheese, growing mushrooms or keeping bees. He’s always been a true Tasmanian craftsman.

    Ian Reed Gold Bar
  • My private barrel is tasting amazing; a rich, oily mouthfeel touched by the sea - beautiful!

    Luke Niejalke Private Cask Owner
  • The in-depth workings of the distillery were explained in detail, and the tastings were amazing. The distillery is set in one of the most beautiful locations in Tasmania. I highly recommend Waubs Harbour Distillery.
