Shipping InformationThis single malt has gained the title of our Head Distiller Rob’s favourite whisky for both its balance and complexity. The ex-Apera Sherry cask gives the spirit those delicious creamy stewed fruit and raisin undertones while the ex-Bourbon cask coats it in spice and wood sugars providing a delicious vanilla toffee sweetness.
This single malt whisky began its life in 20L ex-Apera Sherry French Oak casks then was finished in a second fill 100L ex-Apera Sherry French Oak cask and finally in a 200L ex-Bourbon American Oak cask.

Rob's Tasting Notes
Nose
Dried fruits, raisins and apricots, cream overlayed with kitchen spices - nutmeg, cardamom, clove, allspice. A little match stick. The more you nose, the more complex it is. Also soft oak sugars, buttered calico, cake mix.
Palate
Starts high spice bittered but leads into dried fruits - a developing, balanced whisky. Not just sweet and bitter, more complex than that. Oak sugar offsetting the almost brine like apera bringing the fruits from bittered to juicy.
Finish
Sweet dried pear and brown sugar. That creamy malt lingers.
