Works have begun on our new, larger Smoke & Malt House!

This will enable us to increase our peat smoking capabilities and be able to malt some of our Tasmanian barley on-site. Two things we are incredibly excited for.

“I love a nutty earthy style of peat, rather than big ashtray peated smoke so that’s something we’re working here at Waubs to develop.” Head Distiller Rob.

This is our 3rd iteration of peat smoker as we have refined & upgraded our equipment over the years to achieve the light, coastal peat style that we set out to.

“Our coastal peat has a very different style compared to the Scottish or even the central Tasmanian peats… On the coast we get some of the nutty, earthy characteristics.” Rob.

In 2019, we experimented with a small drum smoker before developing a 300kg rotary smoker in 2020 which we’ve used to lightly smoke our barley up until now.
