The evolvement of our distillery site.

When we first started Waubs Harbour back in 2018, we found & purchased our dream location, renovating this old oyster hatchery (now our still house, brew room & barrel warehouses) but it wasn’t long before we’d outgrown it.  

Thankfully, three years later, we had the opportunity to purchase the neighbouring buildings, now home to our bottling room, dispatch & operations, our Smokehouse, Tasting Room (for guests on Distillery Tours & Guided Tastings) and the Cooperage.

Today our distillery site spans across the ‘the gulch’ here in Bicheno, the body of water protected by a rocky outcrop, Governor Island. It’s not uncommon for guests to see a range of sealife including seals, dolphins, whales & stingrays.
