On a mission this week, sourcing our local, coastal salt marsh peat to make more of our lightly peated maritime Tasmanian whisky!

Head Distiller Rob on the composition of the salt marsh peat:

“You can see how fibrous it is. It’s not roots, it’s the decay of coastal reeds and sedges. It’s like coconut fibre.

“I’ll split it up into slots and dry it out just like you dry out firewood and it’ll burn really nice and clean.” - Rob
