Early in the morning at the distillery, we’ll often find Rob tasting samples straight from the cask.

Over the years of maturation, he’ll monitor them periodically looking at balance, cask influence and overall flavour profile.

Coming up to final maturation, Rob will be tasting the casks monthly. Depending on the age and type of cask, he’ll do a quick assessment - a quick nose and taste on the palate to make sure everything’s as he’d expect.

This week, Rob has been checking on some special finishing casks as they come into their final few months of maturation, doing a full and much more in-depth analysis.

Let’s just say, he’s pretty excited about what he’s seeing. Even if it is his 20th cask sample of the day..
