After a huge few weeks with of the launch of our Salt Marsh Edition 2 whisky & an incredible Tasmanian Whisky Week, our team has been settling back into a ‘quiet’ week here at Waubs Harbour.

A ‘quiet’ week at the distillery looks a little something like this…

Distillery tours & Guided Whisky Tastings, hosted by Xanthe, Daisy & Joseph, sharing our story & our whisky with whisky lovers from all over the world. Bookings are essential via our website.

Each week, Rob is mashing, fermenting & distilling our mouth-coating maritime spirit, from start to finish here at the distillery. A non-negotiable for us when we first set out to create our maritime Tasmanian whisky, with all of our equipment designed & custom made to do so.

Rejuvenating casks in our on-site Cooperage with Laurie. Rob’s often in the Cooperage, chatting with Laurie, seeing & smelling the casks as they’re being shaved, toasted & charred to his specifications.

Hand-bottling, hand-labelling & hand-writing every bottle right here at the distillery by our small team. If you own a bottle of Waubs Harbour, you will know the meticulous care & precision that’s gone into each and every bottle.

Pouring our whisky at some of the best whisky venues all around the country (and beyond!). Ben is regularly on the road sharing our whisky with our favourite venues, catching up with the passionate people who run them and hosting whisky tastings.

We’re constantly filling, monitoring, moving & maturing barrels on the edge of the ocean. It’s certainly no small job and often ends in a game of barrel Tetris as we attempt to find more space in our ever-growing bond stores.

And the daily ideas, decisions & vision it takes to make a whisky that truly means something.

We set out to create the truly maritime Tasmanian whisky that we’d always wanted on our own whisky shelves and live our dream life by the ocean here in Bicheno. The fact that’s resonated with so many of you just makes it all the better.
