A delicious whisky expression from ex-port casks with notes of vanilla oak, brown sugar, stewed sultana, nutmeg and cardamon. Think fruit mince pie, a mix of dried fruits, heightened orange zest with that signature Waubs Harbour maritime character on the nose.
This edition of our Double Tawny Port began its life in 20L ex-Tawny Port French Oak casks in Bond Room 3 at Waubs Harbour Distillery and was later finished in a 100L ex-Tawny Port French Oak cask, allowing the spirit to soften resulting in a sweet rounded port style whisky.
The Bond 3 Preview Series takes spirit which Head Distiller, Rob Polmear, created at another Tasmanian distillery and matured at Waubs Harbour as our stills were being installed. A beautiful combination of fortified and oak with that oily Tasmanian malted barley coming through in the spirit.
Picking up a briny note in this whisky at the top of the glass. Classic sultana, woody brown sugar and toffee.
Burst of dried orange, sweet spiced down the palate like pepper, cardamon and nutmeg. Butter, vanilla, sultana. I’m thinking fruit mince pie. Yum.
Nice and warming. Leaves that buttery sultana finish long after.
